Ragu / bolognese

Ingredients

  • 2 whole Onion
  • 750 g Carrots
  • 500 g Celery
  • 750 g Minced Meat
  • 200 g Bacon
  • 2 tbsp Tomato puree
  • 2 cups Red wine if you have it open (not essential)
  • 1.2 kg Tinned Tomatoes
  • 1 whole Beef stock
  • 1 tsp Salt and Pepper
  • 3 whole garlic
  • 1 tbsp Smoked Paprika

Instructions

Fry the chopped bacon in some oil till the fat runs. Add chopped vegetables, fry till softened but brown. Fry mince till coloured, then tomatoes and puree. Add a bit of water with the stock. Season to taste.
