Mexican Burrito Bowl

Mexican Burrito Bowl

Ingredients

  • 500 g Chicken
  • 150 g Rice
  • 400 g Black beans
  • 1 whole Avocado
  • 100 g Tomatoes
  • 1 whole Onion
  • 1 whole Jalepenos
  • 1 tbsp Smoked Paprika
  • 1 tsp Turmeric
  • 1 tbsp Chilli Powder
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tbsp Cumin

Instructions

Chicken: Marinate thin chicken breasts with the following spices: Smoked paprika, Cumin, Chilli powder, Garlic powder, Onion powder, salt & pepper and Olive oil. Fry for 5-7 minutes on each side depending on thickness. Rice: Fry off some onions and garlic in olive oil before adding some turmeric. Then add the rice of your choice and chicken stock - fry for a couple more minutes. Add water (and optionally peas) and cook for 10 minutes. Then add Rice wine vinegar. Guacamole: Mash a ripe avocado with thinly sliced tomatoes, onions and jalepenos. Season with extra virgin olive oil, salt, pepper and lime juice. Black beans: Fry off in the pan that was used to cook the chicken and use the same spices.
